Recipes








The 3 sassy sisters have jumped into the Trim Healthy Mama life style. It was a lot to think about. I didn't want to spend time studying a life style plan that I would fail. I mean, this time is precious. I could be working on school stuff. Well, I promised Ashley that I would try it and just see what happens. I have been on it for a week and I am in love. My kids love it and it makes my life much easier with cooking for my family. Did I mention I lost 4 pounds? It's a start! So, I made the drive ( an hour) to the best grocery store that has more choices, H.E.B. Plus. All we have here is Wal-Mart and they don't carry as much as Wal-Mart stores in bigger towns. So, I turned the trip into a back to school shopping/ grocery trip. I bought all of our meat for a month. I spent all day shopping, drove home, and didn't have anywhere to put all of this extra food so that I could wait a day before doing my freezer meals. So, I started right away and BOOM! I now have 20+ meals in the freezer for back to school time.

I am stoked! My husband was excited and he is not a "healthy life style" person. 
So, I knew I had to share all of the recipes that I used and they are all THM friendly. Here it goes!

Meal #1  Jambalaya- this makes 2 bags for 2 meals! I found this one on Loving My Nest Blog!

Meal #2  Sour cream chicken enchiladas- I found this on Mrs. Criddle's Kitchen

I decided to do this "teacher" style. I cooked the chicken in the crock pot and froze it separately (labeled of course). That way all I have to do is wrap the chicken in the tortillas, pour the sauce over, and stick in the oven.

Meal #3   Stuffed Pepper Casserole- This is one of my personal recipes that I tweaked and will try in the crock pot. 

Ingredients:
4-5 Bell Peppers (cut into smaller pieces)
1 cup of brown rice (optional) (for a THM you can do cauliflower in place of the rice and for non-THM you can do white rice)
1 Can of rotels (we like our's with a kick of spice you can sub for any diced tomatoes)
1 cup of fresh mushrooms
1 onion chopped
1 can of tomato sauce
2 cloves of garlic
1 lb lean ground beef
salt and pepper to taste (while your cooking it)
Tony's (if you love spicy like I do)
cheddar cheese- low fat if THM

You can throw it all in a freezer bag except the cheese. This is my first time trying this in a crock pot because I usually cook it in the oven. So, I am going to guess 6-8 hours on low. You add seasoning once you know the meat is done and so you can taste it. I am a big taste it and add more person. Top with cheese and ENJOY!

Meal #4- Spaghetti-  Another one of my recipes adapted for my family.

Ingredients:
1 Jar of Spaghetti Sauce (I used a sugar free for THM)
1 lb of lean ground beef
1 bell pepper chopped
2 cloves of garlic
1 cup of fresh mushrooms
1 can of rotels (gives it a kick)
1-2 TBS (Splenda or Stevia)
Dreamfield's Pasta

Directions- Throw everything but the pasta in the crockpot and cook on low 6-8 hours or high 4 hours. Dreamfield's pasta is THM friendly and I read on another blog that it doesn't do well if cooked for long periods of time. So, I am going to cook it on the stove like I normally do. You can tweak this anyway you like.

I know I will be thankful for all of these recipes when soccer and school starts. Life is way to busy for spending hours over the stove during the week.
